Carbonara does not sound like the kind of meal that you can have on a diet - but it is! And honestly? This Slimming World Spaghetti Carbonara tastes so much better than many of the 'full fat' ones you get.
Did you know?: Carbonara should not contain cream. It is made with eggs and cheese mixed together and poured over the cooked pasta - the heat from the pasta is what semi cooks the eggs, but gives it that creamy texture.
Slimming World carbonara is true to the original carbonara - it just cuts down on the quantity of parmesan cheese, and bulks it out with either quark or fromage frais.
Bacon (all fat removed) - cut into cubes
Onion - 1 diced
Garlic - 2 cloves diced
Spaghetti (as much as you want on Slimming World!)
To make the sauce:
Eggs - two whisked
Parmesan - 45g per person for Healthy Extra A
Quark / Fromage Frais - 2 tablespoons
Cook the spaghetti according to instructions. Drain while it is still Al Dente.
Meanwhile spray a large pan with frylight and put the bacon, onion and garlic in to fry.
In a jug, mix the eggs, grated parmesan and quark together to produce a thick batter.
Turn off the heat and drain the spaghetti and put back in the pan. Add the cooked bacon, onions and garlic. Stir in the egg, parmesan and quark mixture until thoroughly mixed through and serve!
