Slimming World Spaghetti Carbonara

Carbonara does not sound like the kind of meal that you can have on a diet - but it is! And honestly? This Slimming World Spaghetti Carbonara tastes so much better than many of the 'full fat' ones you get.

Did you know?: Carbonara should not contain cream. It is made with eggs and cheese mixed together and poured over the cooked pasta - the heat from the pasta is what semi cooks the eggs, but gives it that creamy texture.

Slimming World carbonara is true to the original carbonara - it just cuts down on the quantity of parmesan cheese, and bulks it out with either quark or fromage frais.

Main Ingredients:

Frylight
Bacon (all fat removed) - cut into cubes
Onion - 1 diced
Garlic - 2 cloves diced
Spaghetti (as much as you want on Slimming World!)

To make the sauce:

Eggs - two whisked
Parmesan - 45g per person for Healthy Extra A
Quark / Fromage Frais - 2 tablespoons

Method:

Cook the spaghetti according to instructions. Drain while it is still Al Dente.

Meanwhile spray a large pan with frylight and put the bacon, onion and garlic in to fry.

In a jug, mix the eggs, grated parmesan and quark together to produce a thick batter.

Turn off the heat and drain the spaghetti and put back in the pan. Add the cooked bacon, onions and garlic. Stir in the egg, parmesan and quark mixture until thoroughly mixed through and serve!

This is an absolute favourite of mine. Really easy to do, so filling and here's a trick - don't peel your potatoes…it gives the soup a thickness that others achieve by adding cream. No syns in this one!

Ingredients:

  • Frylight
  • One large onion
  • 2 large leeks
  • 2 cloves of garlic
  • 4 x medium sized white potatoes
  • Mixed herbs
  • Litre of vegetable stock

Method:

Method:

Spray a pan with frylight and turn on to a medium heat.
Chop the onion and add to the pan.
Next, wash and roughly chop up the leeks. Add them next and slowly soften both the onions and the leeks.
Dice up the potatoes (with the skin still on!) and add to the pan.
Pour over the stock and ensure it covers the ingredients. Add a large pinch of mixed herbs and let it simmer for around 20 minutes.

Check that the potatoes are softened and then using a hand blender, whizz up the ingredients to make a thick and creamy soup. Perfect for those winter days!

Slimming World Chicken Fried Rice - who would have thought you could have all those words in one sentence? This is a great recipe - especially when you're missing the takeaways...well, never fear, the fakeaway is here! For added comfort food - you can make SW chips to go along with this, or Mayflower Curry Sauce for a real Chinese takeaway taste!

Ingredients

Two chicken Breasts

Spring Onions

Chinese 5 spice

Soy Sauce

Oyster Sauce

2 eggs

Boiled Rice

Sesame Seeds (Healthy Extra B)

Sesame Oil - optional (6 syns)

Method

Boil the rice and set aside to cool

Heat sesame oil in pan and add the chicken. Cook the chicken part through then add chopped spring onions. Add 20g sesame seeds and allow them to toast in the pan. This will release a gorgeous smell!

Add Chinese 5 spice to the pan and a splash of soy sauce and a splash of oyster sauce.

Once the chicken is cooked through, add the boiled rice and a little more soy sauce and oyster sauce. Mix thoroughly.

Make a hole in the middle and add two mixed eggs. Stir constantly (like making scrambled eggs). Once the egg is cooked through, mix it altogether.

Chicken fried rice - done!

I serve this with mayflower curry sauce - around 4 syns per portion - and slimming world chips for a great takeaway substitute / stodgy dinner for when you feel like you just need carbs!
